“Summertime and the living is easy.” So summertime entertaining should be easy, too. Our menu for June’s cooking class features some of the season’s freshest ingredients. And, includes some of my all time favorite recipes as well. You’ll come away with new recipes and techniques and fresh ideas for easy summer entertaining.
“Taking cooking classes is great…. One of the advantages of learning from a human being is that you pick up very subtle things when you’re cooking side by side…That’s hard to learn from a book. One session with a person is worth reading 10 recipe books.” Michael Pollan

If you’ve ever tasted slow roasted salmon, you know how tender and succulent it is when cooked at a low temperature. With the cooperation of Mother Nature, we’ll pair the season’s first wild salmon with mildly garlicky, gloriously green early summer Garlic Scape Pesto.
“Janice’s classes are the best.” kb
The menu begins with Muhammara, a most boldly flavored dip, spread or sauce. Featuring pomegranate molasses as one of the ingredients, muhammara’s beguiling tart, sweet, savory flavor is perfect with fresh lettuce leaves, labneh, cheese, or as a sauce on grilled vegetables and meats. Though, really, it’s equally good on a spoon.
Learn how to make squash ribbons. We’ll enjoy them as a crisp and brightly flavored Squash Ribbons and Fennel Salad with Red Quinoa. Great as a side salad, entrée or picnic lunch. You’ll love having this salad in your repertoire . . . especially later in the summer when ever-increasing numbers of summer squash grace our gardens.
Our meal ends with a “verrine.” A French term for an appetizer or dessert served “in a vertical manner in a glass.” Ours will feature fresh strawberries, coconut cream, mango and Matcha Almond Shortbread.
