    • And a joy to meet you as well, Florence. So glad you’re going to make the Giardiniera tonight. Here are the sizes of the food processor slicing discs to use with the different vegetables: bell pepper, onion and celery use the 4mm disc; carrots, garlic and hot pepper use the 2mm disc. If you have any questions, please ask. One thing I’ve changed since I wrote the recipe, I now use 2 half gallon jars and 1 quart jar (or the equivalent) then you won’t have any spill over as the giardiniera ferments. (adjust the brine by half for the quart jar.) Also, for this time of year, I tend to let it ferment for at least 5 days, with the quart jar reaching the taste I like a day or two before the half gallon jars.
