It’s been hot this summer. Very hot. Banana Very Berry Nice Cream stands out as a quick and easy cure for the heat. You can make it in a flash. And, there’s no waiting to enjoy it. Incredibly smooth and creamy, especially when eaten immediately after blending. Highly versatile. I like to add frozen or fresh berries. Though, do give frozen or fresh mango, peach or pineapple a try, too. I’ve seen lots of suggestions for other add-ins. From almond or peanut butter, honey, maple or date syrup, to chocolate chips or cocoa powder.

Frozen Bananas are the Key to Speed

Freeze ripe bananas in advance, in order to have dessert ready in minutes.

Ripe bananas are yellow with a few brown spots. My Bananas Ready for the Freezerhusband peels ripe bananas and places them in a reusable bag in the freezer. An overnight stay is all they need to be completely frozen. Though, they can stay in the freezer for weeks at a time without a problem.

Once you’ve got frozen bananas, the rest is easy peasy.

Your choice, fresh or frozen fruit. My preference is for frozen. As frozen berries are often more flavorful, and they hold their shape better than fresh. And, they will keep your Banana Very Berry Nice Cream frozen a bit longer. Note: if using frozen strawberries, quarter them before adding them to the creamy banana mixture.

This is a highly versatile recipe. Consider fresh or frozen mango, peach or pineapple. Other add-ins might be almond or peanut butter, honey, maple or date syrup, chocolate chips or cocoa powder.

plus overnight freezing of bananas and 10 minutes to lightly defrost the fruit (makes it easier on your food processor)

Ingredients Frozen Bananas and Berries

  • 3 frozen bananas
  • 1 ½ tablespoons hazelnut or other milk alternative
  • ¾ cup fresh or frozen berries, i.e., blueberries, raspberries, blackberries, and/or strawberries

Directions

  2. While the bananas are defrosting, cut them into roughly ¼-inch slices.
  3. When using fresh berries, rinse and dry them. In either case, set aside berries for garnishing the top of your Banana Very Berry Nice Cream.Starting the Process of Making Banana Very Berry Nice Cream
  4. Place the sliced bananas in a food processor. Use the pulse button to begin breaking down the frozen bananas. Use a rubber spatula to clean the sides and bottom of the bowl.Add Frozen Berries when Bananas Start Becoming Creamy
  1. Add the nut milk. Continue to process until mostly creamy, occasionally scraping down the sides and bottom of the bowl. Add the berries.
  1. Use Pulse Button to Incorporate BerriesUse the pulse button to gently incorporate the berries with the bananas.

 

  1. For the best texture, scoop into serving dishes and enjoy immediately. Garnish with fresh or frozen defrosted berries, and perhaps a sprig of fresh mint. You can also put Banana Very Berry Nice Cream in the freezer where it will hold its creamy texture for about 15+ minutes.
